During our menu tastings with Chefs @jarrodhuth and Devin Knell, we felt there needed to be an extra touch of decadence so we added a bit of sour cream to bottom of the potato skin before refilling it. . One of the first books that talked about a twice baked potato is the Buckey Cookery and Practical Housekeeping cookbook of 1877, and the baked potato became popular on the Northern Pacific railway in the early 1900s. . Have fun with toppings. I enjoy mine with lots of butter, sour cream and chives but you can add bacon bits or really anything. At @takroomnyc we added sour cream, butter, egg yolk, grated Emmenthal cheese, and then we garnished it with snipped chives and then baked it again.

I’m ordering this for dinner tomorrow. Besides the smoked short ribs, this is probably my favorite dish @majordomola our salmon temaki comes with smoked salmon, scallops, and ikura—plus seasoned sushi rice and nori wraps. Also don’t forget that king salmon from California is a seasonal fish (all wild salmon is seasonal...there is no such thing as organic farm raised) you can eat it however you like, but we recommend cutting up the salmon and mixing it all together with the rice—you get a little of everything in each bite. we still have a few left for pickup today and sunday, plus ribs, fried chicken, and more.
